Cheesy Macaroni & Callaloo Pie Recipe
Together, cheese and callaloo make a delicious culinary combination. Anyone who knows me well knows that I absolutely love cheese! When I am cooking, there’s no such thing as ‘too much cheese’ for me. Callaloo is a leafy green vegetable that is cooked as a side dish or added to Caribbean food such as Oil Down, which is my homeland Grenada’s national dish.
So, for all my cheese lovers out there, today I’ll show you how to bake this really mouth-watering pie which includes callaloo. [Note Well: If you don’t have callaloo, you can substitute spinach]. This Cheesy Macaroni & Callaloo Pie can be eaten by itself or paired with meat or fish and a salad to make a complete lunch - Sunday lunch or weekday lunch.
If you’re looking for healthy, school lunch ideas for kids, then this pie recipe is ideal since, it includes three of the five main food groups – kids’ not-so-favourite but healthy green vegetable, pasta and dairy. You can always add a piece of meat or fish, if you want to include a fourth food group. However, your children will love this all-in-one macaroni pie.

(A) Cheesy Macaroni & Callaloo Pie Recipe
Ingredients for Cheesy Macaroni & Callaloo Pie
2 ½ cups Water
200 g. Elbow Macaroni Pasta
½ lb. Cheddar Cheese (grated)
1 cup Evaporated Milk
1 cup Callaloo (uncooked & chopped)
¼ cup Seasoned Breadcrumbs
2 tbsp. Yellow Mustard
2 Seasoning Peppers (diced)
1 Egg
¼ Onion (diced)
¼ tsp. Salt
Servings: Serves 8 to 12 persons
Preparation Time: 30 - 35 minutes
Preparation Method for Cheesy Macaroni & Callaloo Pie:
§ Pour the water and salt into a pot and bring to a boil.
§ Pour the elbow macaroni pasta into the boiling water and let it cook for 7 minutes in medium heat. Stir the macaroni occasionally, so that it does not stick in the pot.
§ While the macaroni is boiling, grate your cheese, chop up the callaloo and grease the inside of your Pyrex dish or baking dish with butter.
§ Preheat your oven to 350 degrees.
§ At this point, the elbow macaroni pasta should have cooked to ‘al dente’ or a firm consistency. So, turn off the heat under your pot. (You don’t want the macaroni to be totally cooked since it has to go through some more cooking in the oven).
§ Mix in the following ingredients in the pot of cooked elbow macaroni (there should still be a little water in the macaroni): evaporated milk, callaloo, mustard, egg, seasoning peppers, onion and one third of the cheese.
§ Pour half of the macaroni mixture into your greased baking dish and sprinkle half of the remaining cheese on top.
§ Pour the rest of the macaroni mixture in your baking dish, sprinkle the remaining cheese on top and then sprinkle the seasoned breadcrumbs over the cheese.
§ Put your baking dish in your pre-heated oven for 15 minutes, undisturbed.
§ After 15 minutes of baking, open the oven, turn the baking dish around 180 degrees and put it back in the oven to bake for a further 10 minutes.
§ After 10 minutes, check the pie in the oven to ensure that it is cooked golden brown on the top and bottom.
§ Turn off your oven, remove the baking dish and let the Cheesy Macaroni & Callaloo Pie cool for about 5 minutes.
§ Cut the pie into 8, 10 or 12 pieces in the baking dish and place on your dining table for serving.
